Lamb Stew, by a recipe from Shar Planina

Ingredients: 1 head of a lamb, 250 gr. of lamb liver, 200 gr. lamb lung, 1 young onion, 2-3 garlic cloves, 50 gr. rice, parsley, salt, egg and lemon juice. Preparation: You boil the head of the lamb with the onion, parsley and garlic until it softens. When you remove the bones, you place the meat in the drained soup. You add the finely chopped liver, lung and rice. Add salt to the boiled stew together with the beaten egg and lemon juice. Ornament the stew with chopped parsley.
